I’ve seen these no-bake snacks all over Pinterest, and
I wanted to share my version. They are
really good, filling, and a quick snack to grab. My husband was skeptical because of the flax
seed. He was totally FREAKED OUT to find out we had flax
seed in the cupboard - don’t ask me WHY!!!!!!!
He caved in and ate one and agrees they are really good. Flax seed might be the only thing you need
from the store……Or you might just skip that ingredient~~~~~Enjoy!!!
2 cups oatmeal
1 1/3 cups coconut flakes
1 cup peanut butter
1 cup ground flax seed
1 cup mini chocolate chips
2/3 cup honey
2 teaspoons vanilla extract
Mix all the ingredients together in a bowl. I TOTALLY
recommend using your hand - works much better than a spoon or spatula!!!!
Chill in the refrigerator in a covered bowl for
about an hour
Roll into balls about 1” in diameter. Store them in the refrigerator.
