Energy Snack



Do you find yourself snacking just a little bit while you watch it snow?  Or while you are watching TV?  Or because your sugar dropped?  Or just because the sun came up? 

Join the crowd!!!

I’ve seen these no-bake snacks all over Pinterest, and I wanted to share my version.  They are really good, filling, and a quick snack to grab.  My husband was skeptical because of the flax seed.  He was totally FREAKED OUT to find out we had flax seed in the cupboard - don’t ask me WHY!!!!!!!  He caved in and ate one and agrees they are really good.  Flax seed might be the only thing you need from the store……Or you might just skip that ingredient~~~~~Enjoy!!!

2 cups oatmeal
1 1/3 cups coconut flakes
1 cup peanut butter
1 cup ground flax seed
1 cup mini chocolate chips
2/3 cup honey
2 teaspoons vanilla extract

Mix all the ingredients together in a bowl.  I TOTALLY recommend using your hand - works much better than a spoon or spatula!!!!

Chill in the refrigerator in a covered bowl for about an hour

Roll into balls about 1” in diameter.  Store them in the refrigerator.

Take a Walk on the Wild Side.........Wild Rice Recipe!!!!









To begin with, it’s got a little bite to it.  When I make it, it has a bigger bite to it.  I mean come on……. ½ cup of diced jalapenos is kids’ stuff, so I end up with 2 cups……. at least.
      Next, it is creamy and smooth………sour cream..mozzarella cheese……rice………it is just smooshy in your mouth.  Pure delicious!! 
I   highly   recommend it as a side dish, and it is actually better the next day.

1 box Uncle Ben’s Long Grain Wild Rice - cook as directed
1 ½ cups sour cream
1 can mild green chilies
1 cup chopped tomatoes
1 cup mozzarella cheese
½ cups diced jalapenos (candy-butt method)
OR
1 cup diced jalapenos (you’re -getting -there method)
OR
2 cups diced jalapenos (atta- girl method)


Cook rice as directed.  Mix all ingredients and add rice.  Mix well.  Microwave for 5 minutes and serve.  Yum level 10.
